Yethu - Chenin Blanc
Expressive Chenin blanc that features peach, guava and pineapple aromas supported by a bright burst of citrus on the palate.
The Chenin blanc grapes are sourced from vineyards situated in the valley floor of the Tulbagh region. Grapes were hand-picked in the early morning and brought to the cellar in smaller lug boxes. Bunches was destemmed and the berries partially crushed before entering the press.
Only the free-run juice was collected and cold-settled for a period of 48 hours. The clear juice was racked off the lees and inoculated with a yeast strain known for slower fermentation and fermented at a temperature of 16°C. Fermentation lasted for
about 3 weeks. The wine was removed from the gross lees and aged on the fine lees in the tank for at least 3 months.
Battonage once a week – a process where the fine lees are stirred to ensure maximum wine contact with the yeast during the process of yeast autolysis. This enhances complexity and a full-bodied wine.
